Let's Get Crackin'!

On the evening of Tuesday, August 31, 2010 all seven of the gourmet girls gathered around Lynley's table for a decadent crab feast!  We started off the evening with Lemon Margaritas (w/o the alcohol) and LS's delicious appetizer: watermelon with goat cheese and hazelnuts.  Coincidentally Andrea's Arugula, Watermelon and Feta Salad had many of the same ingredients.  Raquel treated us to Red Lobster's Cheddar Biscuits and our side by Jodi was Ina Garten's Corn Confetti.  Our main dish of course was King Crab Legs and Lara treated us to some authentic French Crepes for desert(made by a Frenchman himself)!  Bridget sent a "to-go" treat of Sticky Vanilla Popcorn.  Lynley was prepared with bibs, buckets for the disposal of crab legss, crackers and tiny crab forks.

Our hostess hard at work!

King Crab Legs!
Lynley boiled them for 4 minutes.  Because they were so long, she turned them around 1/2 way through.  She cooked 8 lbs for the seven of us, which allowed each of us two crab legs.  So generous!  She shopped around a little and found Costco to have the best price.

Lara's Delicious Crepes

1/4 cup sugar
3 drops vanilla extract
2 eggs
1 cup milk
1/2 cup water
1 cup flour
2 TBS melted butter
pinch of salt

Mix everything but the flour first, then slowly add the flour.  Mix it until blended.  IT should be thick but not too thick.  Turn the stove on to about a 7 (you can adjust up or down as necessary as you cook).  Spray or butter a crepe pan.  Pour into the buttered pan to cover the bottom of the pan thinly while rotating your hand to get coverage.  When it's done sprinkle some sugar on it while it's hot.  Makes 6 crepes.  BON APPETIT!

Sticky Vanilla Popcorn
1 cube butter
1/2 cup sugar
A little less than 1/2 cup Karo syrup
1 tsp vanilla powder

Pop popcorn and set aside.  Melt butter in saucepan on stove.  Add sugar, Karo syrup, and vanilla powder, stirring continuously.  Let boil for one minute.  Stir in popcorn and enjoy!  I popped 3/4 cup of kernels and it seemed just the right amount to be thoroughly covered, but not too gooey.  I dump the popped corn into another bowl after it has popped to remove uncooked kernels.

End of Summer Wrap

Summer is coming to a close and I have a few updates I thought I would share.

I've now made the Chocolate "Go-To" cake from Keeping up FIVE times! Fathers Day, my brother's birthday, for a piano family, for my neighbors and for a family desert night on Sunday! It's hands-down a hit! The first four times I made it with the chocolate frosting and this past Sunday I tried the Buttercream Frosting (primarily because I was out of coco!) But I honestly think I liked it better. My next move is to try a cream cheese frosting. Here is a picture of it for my brother Dustin's birthday. I think it looks nicer in the white dish rather than a metal or Pyrex container, but it tastes good no matter what. I do think it's time to invest in the bulk-sized coco container.

Confession, I bought a can of icing for the writing and border. Here is the frosting I used:

It actually wasn't bad, but I would love to get some of these decorator bottles from Pampered Chef. Dont' they look cool?

For this same birthday/4th of July dinner I made a salad Lara made for a gourmet night some time ago (May 2008). I've been wanting to make it ever since that first tasting and finally pulled it together!

Tortellini Salad with Asparagus and Fresh Basil Vinaigrette
(See recipe on May 26, 2008 post)

Rob and I celebrated our one-year anniversary this past weekend by spending two nights at the Marriott City Center and had a fabulous dinner at "Em's" on Saturday night. I had heard great things about this restaurant and have been wanting to try it for some time. I loved it!

A Night in India

It's not often the Gourmet Girls have a "theme night", but theme night it was at Miss Jodi's on Tuesday, July 20, 2010. It was a "A Night in India", complete with bindis for all! First off, Jodi treated us to fresh Mango Lassis (a popular yogurt-based drink of India and Pakistan). We then had our appetizer by Andrea, Indian Relish and Naan (a leavened, oven-baked flatbread, particularly popular in India). Lynley favored us with Cooling Cucumber Raita Indian Salad. Jodi's Chicken Tikka Masala was AMAZING next to a side of Bridget's Basmati Rice Pilaf with Apricots and Lara's Potato and Rosemary Flat Bread. For desert, we had something completely non-Indian, in fact 100% American: Sour Cream Peach Pecan Pie by LS! Absolutely delicious!

I often chat with those of you who follow our blog and the common feedback is, "Everything you make looks so difficult; I could never make any of those dishes, but it is so fun to look." Not true. We all commented on the easiness of all of the dishes in tonight's meal. The peach pie was perhaps the most time-intensive, but honestly if you follow the recipe you will succeed! And you can always feel free to email any of us with questions! Enjoy!

Evidently this is some sort of Indian sign.

Cooling Cucumber Raita Indian Salad

1 tsp cumin seeds
2 cucumbers, peeled and chopped
1 small tomato, chopped
1 red or white onion, cut into crescents
2 cups plain yogurt
2 tsp finely chopped fresh mint
1/4 tsp salt
1/4 tsp paprika

Toast cumin seeds lightly in a drying pan and mash them slightly with the back of a wooden spoon. In a medium bowl, mix together all ingredients. Taste and adjust the seasonings. Refrigerate for 1/2 hours before serving. This raita does not keep well, so plan to eat it fresh. Serve with lemon wedges.

Light Summer Fare

It happened again. The gourmet girls met for another amazing meal. We met last night, Tuesday, June 22nd at Bridget's (my) house. We started off the evening with yummy Marinated Feta and Olive Skewers by Lynley. The salad was Jodi's contribution - the Basil Green Goddess Dressing was awesome (Barefoot Contessa at Home)! I skewered up Grilled Herb Shrimp with Mango Salsa (Barefoot Contessa Parties!) and Lara's Black-Eyed Pea Salad was the perfect side (Paula Deen - The Lady and Sons Cookbook), especially with all of the fresh herbs from her garden! LS hit a home-run with her Summer Solstice Bread and just when we thought the night couldn't get any better, Andrea treated us to Liege Waffles with whipped cream. It was the pearl sugar that made it! Apparently the only two stores who carry it are Ikea ($3.95 for a 20 oz bag) and The Old Dutch Store in Sugarhouse (20 oz box for $5.95). As always, we had a great meal and a great time. Coincidentally, three of our dishes had fresh chopped basil! Unfortunately Raquel couldn't join us this time. We're all excited to meet at Miss Jodi's next month for some Indian Cuisine!
Marinated Feta and Olive Skewers
2 tsp fennel seeds
2 tsp orange zest
3 TBS orange juice
1 tsp cracked black pepper
4 oz feta cheese, cut into 24 (1/2 inch) cubes
24 mint leaves
1/4 large English cucumber, seeded, and cut into 1/2 inch chunks
12 pitted green olives, halved
24 (6 inch) skewers
In a medium bowl combine the fennel seeds, orange zest, orange juice, and pepper. Gently stir in feta and marinate for 1 hour or more. To make the skewers, place a mint leaf about 2/4 inch up the skewer, then add an olive half, then a chunk of cucumber. Gently place a cube of the marinated feta on the end.
Bibb Salad with Basil Green Goddess Dressing
1 cup good mayonnaise
1 cup chopped scallions, white and green parts (6 to 7 scallions)
1 cup chopped fresh basil leaves
1/4 cup freshly squeezed lemon juice (2 lemons)
2 tsp chopped garlic (2 cloves)
2 tsp anchovy paste
2 tsp kosher salt
1 tsp freshly ground black pepper
1 cup sour cream
3 heads Bibb lettuce

Place the mayonnaise, scallions, basil, lemon juice, garlic, anchovy paste, salt and pepper in a blender and blend until smooth. Add the sour cream and process just until smooth. Add the sour cream and process just until blended. (If not using immediately, refrigerate the dressing until ready to serve.) Cut each head of lettuce into quarters, remove some of the cores, and arrange on 6 salad plates. Cut the tomatoes into wedges and add to the plates. Pour on the dressing and serve.
NOTE: According to Mr Produce Man at Harmons, "Bibb" lettuce and "Butter" lettuce are the same thing.

In Barefoot Contessa Parties!, she lists the grilled shrimp and mango salsa together. The link above to the mango salsa is the same recipe, just served with seared tuna.
Black Eyed Pea Salad

3/4 cup olive oil
1/3 cup balsamic vinegar
1/4 cup sugar
2 cans black-eyed peas, drained and rinsed
1 green bell pepper, seeded and diced
1 yellow bell pepper, seeded and diced
1/2 cup chopped green onions, with tops
1 large tomato, diced
1 TBS fresh minced thyme
1 TBS fresh minced rosemary
4 TBS fresh minced parsley
2 TBS fresh minced oregano
Mix olive oil, vinegar, and sugar together and pour over the rest of ingredients. Mix well and chill. Use a slotted spoon to serve.
Mid-meal shot

And another mid-meal shot . .
Update: Andrea asked me to add this insider's tip . . .

This recipe suggests using a Belgian waffle iron with an adjustable temperature gague but my Krups Belgian waffle iron has only two settings...on and off so if your iron is like mine then here is a tip we found for cooking the waffles without burning the sugar. Scoop the dough onto your iron, close the top and unplug the iron. The iron will be hot enough to cook the waffle in about about 3 minutes without burning the sugar outside. Also, I have made these with and without the cinnamon and we think they are better WITH the cinnamon added. Top with lightly sweetened whipped cream or creme fraiche and fresh fruit for a yummy dessert!
